Vegetable Navratan Korma

Ingredients and spices that need to be Make ready to make Navratan Korma:

  1. 1 cup chopped / diced carrot
  2. 1 cup chopped French beans
  3. 1 cup green peas
  4. 9-10 cauliflower florets
  5. 1/2 cup sweet corn kernels
  6. 1 small capsicum
  7. 1 medium potato cut into cubes
  8. 1 medium tomato,
  9. 5 green chilli
  10. 1/2 tsp cumin seeds,
  11. 1 dry red chilli,
  12. 3 cardamom,
  13. 5 pepper corns,
  14. 5 cloves,
  15. 2 bay leaf,
  16. 2 small cinnamon stick
  17. 1/2 tsp coriander powder,
  18. 1/2 tsp cumin powder,
  19. 1/2 tsp hing,
  20. 1/2 tsp garam masala,
  21. 1 tsp kasuri methi
  22. 2 inch ginger,
  23. 150 - 200 grams paneer
  24. For paste
  25. 15 cashew,
  26. 8 almonds,
  27. 3 tsp poppy seeds,
  28. 4 tbsp milk
  29. 1/4 cup fresh cream/ malai
  30. 1 cup milk,
  31. 2 tsp sugar
  32. 2 tbsp oil
  33. 2 tbsp ghee + 1 tbsp oil
  34. 10 raisins

Steps to make Navratan Korma

  1. Assemble all vegetables and other ingredients. Marinade paneer pieces in salt for 10 -15 minutes.
  2. Assemble all ingredients, make a paste of tomatoes + green chilli + ginger.
  3. Make a paste of soaked cashews + almonds + poppy seeds + milk
  4. Par boil all vegetables except capsicum and sweet corn, drain excess water and keep aside.
  5. Fry raisins in oil and keep aside. Fry marinaded paneer till golden yellow and keep aside.
  6. In moderately heated pan/ kadhai, add oil +ghee and add all whole spices and allow to crackle and turn aromatic, then add the tomato paste and stir fry till oil appears on surface. Then add all the veggies + capsicum + sweet corn + salt and sauté for 5-6 minutes. Veggies will turn tender.
  7. Now add all spices,mix well and stir fry till spices fried well, add milk and mix well. Cook for 3-4 minutes under medium flame.
  8. Now add cashews almonds paste + garam masala + sugar + salt, mix well and simmer for 2-3 minutes, then add paneer + Malai +Kasuri Methi, stir well and simmer for 1-2 minutes.
  9. Keep in stand by mode for 2 minutes and Navratan Korma is ready.
  10. Serve with paratha/ naan/ rice / Pulao, etc
